Skinny Dark Chocolate PB Cups

Alright, I don't know about you guys but..

I LOVE Reese's Peanut butter Cups. They are usually my comfort snack when I am just craving chocolate. However, with my stomach issues and endometriosis, no matter how small they are, they make me nauseous, yet, I still indulge in them.There is just something about that chunk of peanut butter in the middle and that milk chocolate melting in your mouth. (drooling). But, if I am going to be realistic, there is no way I can continue eating them. They make me way too sick. I thought I could fight the sickness with how delicious they are, but I just CAN'T anymore. If you want to see me pout like a baby, take away my Reese's peanut butter cups. So after pouting for a few days, I found this MIRACLE recipe! SKINNY, VEGAN, GLUTEN FREE PB CUPS!

Anything with the word SKINNY in it, that has to do with sweets that is, is super exciting! That means enjoying one of my guilty pleasures, guilt free! Of course still in moderation.

These skinny dark chocolate PB cups are just as creamy and delicious as regular Reese's. I suggest you bring them into your life..like yesterday. I especially like that the recipe is simple. It does not use anything out of the ordinary to make it SUPER healthy.  My goal is to try to come up with healthy recipes that don't require you to have to pull out a dictionary just to figure out what the hell the words in the ingredients mean. I don't know about you but I HATE those types of recipes. It almost keeps me away from wanting to eat healthy. But eating healthy does not have to be hard. It can be delicious and easy. (Cough this recipe cough).  

 

So there is a secret ingredient in this recipe. Ready? It's the PB Fit Powder. Or as I call it, THE BEST THING EVER INVENTED. If you are not familiar with the powder, it's a powder made from roasted peanuts and most of the oil is extracted. Because of this, it takes a CHUNK of the calories out of it. Yet, the taste is still the exact SAME. With the fit powder, 2 tbsp is 50 cals where as regular peanut butter, 2 tbsp is about 200 cal. It's all natural, vegan, and gluten free. I most definitely recommend it! Another secret as to why it doesn't hurt my stomach is that I use dark (healthier obviously) dairy free chocolate. The best brand, that I use, is Enjoy Life!

Take that endometriosis! I outsmarted you AGAIN! Are you guys ready for the recipe now? Here it is! 

 

Ingredients:

 

-1 cup PB Fit Powder

- 1 cup water

- 1 Cup Dark Dairy Free Chocolate Chips

-1/4 cup almond milk (dairy/soy free) (room temperature)

 

Instructions:

1) Line a mini cupcake pan with mini cupcake liners. Add chocolate chips to microwave safe bowl and microwave until fully melted. Gently stir in the almond milk until it is a creamy consistency. 

2) Scoop a spoonful of the melted chocolate into the cupcake liners. (Don't fill it all the way up, scoop just enough to cover the bottom of the cupcake liner). Place in freezer for a few minutes to help harden the chocolate. 

3) Combine the PB powder and water in a bowl. Mix until creamy texture forms. (it will be slightly runnier than regular pb, that's ok). Pour the PB into each of the cupcake liners to create another layer on top of the solid chocolate. Stick back in freezer for 30 minutes so the peanut butter mixture can harden. 

4) Finally add the last batch of melted chocolate on top of the peanut butter. Return to freezer and let the cups fully freeze. 

 

**Store in freezer to keep from melting**
