Recipe for Low Carb Keto Shortbread Cookies
(endometriosis friendly)



-2  1/2 cups Almond Flour

-1/4 cup Confectioners Erythritol 

-1/2 cup unsalted butter-soft

-1 TSP vanilla 

-2 TBS Granulated Erythritol (optional)



1)Preheat oven to 350 degrees. Line a baking sheet with parchment paper. 


2)Using a mixer- cream butter and confectioners.

3) Add vanilla then add 1/2 cup of almond flour. Blend then add more- continuing to add slowly. Dumping in all at once will make it hard to combine. 

4) Use a TBspoon to scoop out and form 24 cookies. Line them on the parchment paper. Use back of spoon to flatten them out and form them more into cookies. Sprinkle with granulated erythritol. 

5) Bake for 10 minutes. Let cool for an hour before serving. I topped mine off with some confectioners erythritol. 

**Makes 24 cookies**
