Keto Oreo Cookies

Ingredients

Cookie:

-1/2 cup almond flour

-6 tbsp granulated sugar replacement (I used Stevia)

-1 egg

-5 tbsp unsweetened baking cocoa powder

2 tbsp avocado oil (you can use vegetable oil as well)

-1 tsp vanilla extract

-1/2 tsp baking powder

-pinch of salt

-2" circle cookie cutter

Vanilla Cream:

-1/3 cup soft butter

-3 tbsp powdered sugar replacement

-1 tsp vanilla extract

-1 vanilla pod, scraped 

Instructions

1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. 

2. Mix the cocoa powder, Stevia, vanilla extract, and oil of choice in a bowl. Add in the egg and mix until well combined.

3. In sperate bowl mix together the almond flour, baking powder and salt. 

4. Add the flour mixture to the cocoa mixture and begin mixing it together with your hands to form the dough. 

5. Now it is time to roll out the dough. You may want to split the dough in a few parts to do this. Place the dough on parchment paper. Add another piece on top of the dough. Using a rolling pin, roll it out. 

6. Use the cookie cutter to cut out the cookies. Place them on the prepared cookie sheet. Continue this process until there is no dough left. 

7. Bake for 6 minutes. Let the cookies cool down completely before adding the vanilla cream.

1. For the cream, while cookies are cooling, beat the softened butter with the powdered sugar + vanilla extract. Add the inside of the vanilla pod. 

2. Frost one side of the cookie with the cream then place another cookie on top. Making a sandwich. 

3. Chill the cookies in fridge for one hour before eating. 

This recipe yields about 10 sandwiched cookies. Store these in an air tight container in the fridge!
