Recipe for Keto Lemon Bars
For the crust:
-2 Cups Almond Flour
-1/2 Cup Sweetener of choice
-1/2 Tsp Vanilla Extract
-1 cup butter melted
For the lemon filling:
-1 1/2 Cup choice of sweetener
-1/4 cup almond flour
-4 eggs beaten
-1/4 tsp Xanthan Gum (you can substitute with corn starch)
-Powdered Sweetener to top
1)Preheat oven to 350 degrees. Line a baking pan with parchment paper. I used about a 9 inch pan.
2) In a large bowl mix all the ingredients for the crust, together. Mix the dry ingredients first then add the wet.
3)Pour mixture into pan. Bake for about 25 minutes or until edges are brown/top is brown.
4) While that is baking- make the lemon filling. Mix all the filling ingredients together in a bowl- dry ingredients first then the wet. For the lemons, if you do not feel like zesting and squeezing them, you can use the already squeezed lemon juice (that is what I used).
5) Take crust out of oven and let cool down before pouring lemon filling on top. Once you pour the filling on top, place back in oven for another 20 minutes at 350 degrees.
6) Again after cooled down completely, stick in fridge for 2 hours. Take out, cut into 12 square bars and sprinkle powdered sweetener on top.
