Keto Funfetti Bars



For the bars:

-1/2 cup coconut flour

-2 tsp baking powder

-1/3 cup swerve confectioners sugar substitute

-1/2 cup butter

-1 egg

-1 tsp vanilla extract

-1/4 tsp butter extract

-1 tbs coconut oil

-3 tbs sugar free sprinkles of choice 


For the icing:

-4 tbs butter

-3 oz cream cheese

-1/4 cup swerve confectioners sugar substitute

-1 tsp vanilla extract

-1 tbs sugar free sprinkles of choice



1) Preheat oven to 325 degrees. Grease a loaf pan and set aside. 

2) Mix the coconut flour, baking powder and 1/3 cup confectioners sugar in a bowl and combined well. 

3) Add 1/2 cup butter, 1 egg, 1 tsp vanilla, 1/4 tsp butter extract, and 1 tbs of coconut oil to dry ingredients. Blend together on high until smooth. 

4) Fold in 3 tbs of sugar free sprinkles.

5) Put batter in greased pan, and bake for 20 minutes. Let the cookie mixture cool completely.

6) Once cooled, make the icing by combining all the icing ingredients in a small bowl. It should turn out light and fluffy.

7) Smooth the icing over the cookie mixture. Top with sprinkles then cut and serve.
