Keto Friendly Blueberry Muffins

Keto friendly, dairy free, gluten free
Makes 12 muffins.
Ingredients
-2 cups almond flour *(see notes)
-2 eggs
-2 egg whites
-1/4 cup honey * (see notes)
-1 tsp baking soda
-1 tbsp apple cider vinegar
-1 tsp vanilla extract
-2 tbsp coconut oil
-1 cup blueberries
Instructions
1. Preheat oven to 350* degrees and line or spray muffin tin.
2.Combine all ingredients except for blueberries, in a mixer. Blend until smooth.
3.Add in the blueberries and carefully fold them into the mixture.
4.Scoop out mixture into muffin tin. Bake for 25 minutes.
5. Cool before eating. I like adding a little bit of butter to my muffin before I eat them!

**Notes**: This recipe calls for honey. I cannot eat honey so I sprinkled some Truvia(natural sweetener) instead. I didn't measure a certain amount, just coated the batter with it. Next time, I may add a bit more. I also sprinkled a little bit on top of the muffin when they were done baking, added a pretty look to them.
If you have a nut allergy, obviously you should not use the almond flour. Find a Keto friendly flour that works for you! You can always use GF flour, but there are a lot of carbs in it.
